Tomato Sauce
ingredients
- 1 small onion, finely diced
- 1 garlic clove, chopped
- 1 bay leaf
- Sprig of thyme
- 1 tbsp tomato puree
- 400g chopped tomatoes
- 100ml prepared vegetable stock
- ½ small pack of flat leaf parsley, chopped
- 1 tsp rapeseed oil
- Freshly ground black pepper

method
1. Heat the oil in a pan and add the onion, garlic, bay leaf, and thyme. Cook until onions are soft and translucent.
2. Add the puree and cook for a further 10 minutes. Add the stock and chopped tomatoes and continue to cook slowly until thick.
3. Add the parsley to the sauce and season with black pepper.
Serving suggestion: Not only is this a perfect base for our pizza recipes but can also be used as a pasta or gnocci sauce.
