Whole Roasted Cauliflower
ingredients
- 1 cauliflower, leaves removed and stem trimmed flat
- 1 tbsp Dijon mustard
- 1 tbsp rapeseed oil
- 2 garlic cloves, peeled and diced
- 80g mature Cheddar cheese, grated
- 40g vegetarian Parmsesan style cheese, grated
- 1 small packet of flat leaf parsley, leaves finely chopped
- 20g crispy fried onions
- Freshly ground black pepper

method
- Preheat the oven to 180°C.
- Sit the prepared cauliflower on a roasting tray. Combine the Dijon mustard with rapeseed oil and garlic.
- Combine the Cheddar and Parmesan with the parsley, crispy onions and season with black pepper.
- Brush the cauliflower with half the Dijon mixture and place into the preheated oven. Roast until a skewer can be pressed through the core (approx. 40 minutes) or until tender and starts to char slightly, turn down the oven if it starts to colour too much.
- Remove the cauliflower from the oven and brush with the remaining mustard mixture. Coat liberally with the cheese mixture and return to the oven for a further 5-10 minutes until the cheese is melted and caramelised. Remove from the oven. Rest for a minimum 5 minutes.
- Carve into wedges and serve.
Serving suggestion: serve with a quinoa salad and mixed leaves or as a meat-alternative for a Sunday roast.
Chef's tip: you can find ready-made crispy fried onions in most supermarkets.
