Spooky Stuffed Peppers
ingredients
- 2 Peppers
- 100g rice/couscous
- 50g feta cheese (opional)
- 1 large clove garlic
- 150ml boiling water
- Juice and zest 1/2 lemon
- 1tsp mixed herbs
- 1/2tsp ground coriander
- small handful fresh basil
- 1tbsp olive oil
- Pinch Salt & pepper

method
1. Preheat the oven to 180ºC
2. Add the dried couscous to a bowl, then pour the hot water over the couscous. Add the zest & juice of the lemon to the bowl, together with the mixed herbs, ground coriander and a pinch of salt and pepper. Mix well then cover the bowl for approx 10 minutes.
3. Meanwhile, cut the top off the peppers remove the seeds slice the garlic and add to the peppers with half of the basil leaves. Drizzle with the oil and roast in the preheated oven for approx. 10 minutes or until soft. Remove and cool.
4. Fork through to loosen the couscous grains to loosen.
5. Crumble the feta and combine with the couscous and the remaining basil leaves.
6. Stuff the mix into the peppers and place the tops back on.
7. Place back in the oven for approx.8 minutes to heat through.
8. Serve and enjoy!
