Soda bread
ingredients
- 250g white flour
- 250g wholemeal flour
- 100g porridge oats
- 500ml buttermilk
- 25g unsalted butter
- 1 tsp bicarbonate of soda
- pinch of salt

method
- Preheat the oven to 180 degrees and line a baking tray with flour.
- Mix all the dry ingredients into a large bowl and mix thoroughly.
- Rub the softened butter into the dry ingredients with your fingertips.
- Pour in the buttermilk and mix it in quickly with a fork and bring the dough together very lightly with your fingertips, gently!
- Shape it into a flat, round loaf and dust with flour and score a deep cross in the top.
- Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped.
- Once cooled, slice and enjoy!
Top Tip: Add 100g of sultanas and a teaspoon of cinnamon for a sweeter alternative!
