Quinoa and Fava bean salad
ingredients
- 300g Raw Quiona
- 100g broad beans (canned)
- 2 tbsp olive oil
- 100g sliced black olives
- 200g cubed feta cheese
- 20g fresh mint, sliced
- 400g cherry tomatoes
- Pinch of salt and pepper
- Zest and juice of one Lemon

method
1. Cook the quinoa in a pan of boiling water for 6-8 minutes until tender. Drain the quinoa & rinse with cold water.
2.For the dressing - zest and juice the lemon and place in a bowl & mix together with oil, season with black pepper and salt.
3.For the rest of the salad - crumble feta, drain the olives and cut cherry tomatoes in half. Peel broad beans & roughly chop the mint & parsley leaves. Mix all of these ingredients with the quinoa & add the dressing. Mix together well.
