Sabji Pulao Mixed Spicy Rice
ingredients
- 200g uncooked brown basmati rice
- 1 tbsp rapeseed oil
- 40g cashews
- 60g raisins
- Salt and pepper to taste
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp chilli powder
- 1 tbsp curry paste
- 1 tsp cloves

method
- Wash and drain the rice. Heat the oil in a pan and fry the cashews until golden in colour. Add the spices and leave on a low heat for 5 minutes to infuse then leave aside.
- Bring a pan of water to the boil. Add the rice & cook for 30-35 minutes or until tender. Drain & keep warm.
- Add the spiced oil to the rice along with the cashews and raisins.
- Serve and enjoy!
