Rainbow Chicken Bowl
ingredients
- 180g pack of cooked chicken breast
- 1 cup cooked quinoa (cooked grain pouches work well her and you could also use wholegrain rice or couscous)
- 200g tin sweetcorn, drained
- 60g red cabbage, finely sliced
- 1 red bell pepper, deseeded and sliced
- 1 medium carrot, coarsely grated
- 1/2 small head broccoli, florets
- 1 small avocado, cut into slices
- 1 tsp paprika
- 1 tbsp olive oil
- Juice of 1/2 lemon
- Pinch salt & pepper

method
- Start by preheating the oven to 180C.
- On a baking tray, arrange the pepper slices at one end and the drained sweetcorn at the other end. Sprinkle the paprika over the sweetcorn and toss to coast.
- Drizzle the olive oil over the veggies to coat well, then cook in the oven for around 30 minutes, until the peppers are starting to char and the sweetcorn is golden and crunchy.
- Whilst the peppers and sweetcorn are roasting, steam the broccoli florets until tender.
- Once the peppers and sweetcorn are ready, it's time to assemble your rainbow bowls.
- Divide the quinoa between 2 separate bowls, then top with the chicken, cabbage, sweetcorn, peppers, carrot, broccoli and avocado slices.
- Season with a little salt and pepper to taste, then squeeze over some fresh lemon juice over each bowl before serving.
