Nutritional Bolognese

- 280g lean minced beef
- 1x 400g can lentils, rinsed and drained
- 300g tomato passata
- 1 tsp oregano
- 1 bay leaf
- 90g celery
- 90 onion
- 90g carrot
- 90g courgette
- 1 clove garlic

method
- Roughly chop the onions, celery, carrots and courgette. Add to a blender, together with the garlic clove and pulse to make a veggie mince.
- Heat a large pan over a medium to high heat and fry the beef mince until browned. Remove the pan from the heat and drain any excess fat.
- Return to the heat, then add the veggie mince, bay leaf and oregano. Cook the mixture over a medium heat for around 5 minutes, stirring regularly.
- Add the lentils and passata, then continue to cook for a further 10 minutes.
- Season to taste, then serve over your favourite pasta!
