Harissa Pork Skewer
ingredients
- 550g diced pork shoulder
- 2 tsp smoked paprika
- 1 tbsp red wine vinegar
- 60g harissa paste
- Freshly ground black pepper
- 8 wooden skewers, soaked in cold water for at least 2 hours

method
- Combine the harissa paste with the red wine vinegar, smoked paprika and black pepper. Coat the pork in the paste and marinate for a minimum 2 hours or ideally overnight in the fridge.
- Preheat a grill to high. Divide the meat between the 8 skewers (2 per person) and grill until cooked through, approx. 10-12 minutes with good colour. Rest for 2-3 minutes before serving.
