Anything goes Kimchi
ingredients
Cauliflower leaves, roughly chopped
2 large carrots, roughly chopped
2 garlic cloves, peeled & crushed
Fresh ginger, one 15cm piece, peeled & finely chopped
2 tbsp honey
1 tbsp Korean red pepper powder or gochujang
2 tbsp rice wine vinegar
1 tbsp table salt

method
1.Place the honey, ginger garlic, rice wine
vinegar salt into a small bowl and mix well.
Add Korean red pepper powder.
2.Once mixed massage the mixture into the
cauliflower leaves (or whatever vegetables
you are using).
3.Add the mixture to a clean kilner jar, press
it all down and cover with a muslin (or you
can use cling film).
4.Place in the fridge for 5 days to allow it to
ferment before serving
