Saag Aloo
ingredients
- 2 tsp cumin seeds
- 1 large onion, finely diced
- 2 garlic cloves, finely diced
- 1 tsp diced fresh ginger
- 2 tsp ground cumin
- ½ tsp hot chilli powder
- 1 tsp ground coriander
- 1 tsp ground turmeric
- 1 green chilli, deseeded and finely chopped
- 200g chopped tomatoes
- 1 tbsp tomato puree
- 600g potatoes (Maris Piper), peeled and cut into ¼ inch dice
- 300g spinach
- 2 tsp garam masala
- 2 tsp rapeseed oil
- Coriander, chopped to serve

method
1. Heat 2 tsp oil in a pan and fry the cumin seeds for 2 minutes. Add the onion, garlic and ginger, cook for a further 5 minutes.
2. Add all the spices apart from the Garam Masala and the fresh chilli, fry for 2 minutes.
3. Add the chopped tomatoes and tomato puree, simmer for 15 minutes. Add the potatoes and spinach and simmer for a further 5 minutes. Check the seasoning, then finish with the Garam Masala and chopped fresh coriander.
