Sweet Potato & Spinach Rogan Josh
ingredients
- 1 tbsp rapeseed oil
- 1 cardamom pod
- 1 cinnamon stick
- 2 whole cloves
- ½ tsp cumin seeds
- ½ tsp ground cardamom
- 1 large onion, sliced
- 2 tsp ginger puree
- 2 garlic cloves, crushed
- 120g rogan josh paste
- 240ml prepared vegetable stock
- 1 large sweet potato, peeled and cut into 3cm dice
- 400g can chopped tomatoes
- 240g chickpeas (drained weight)
- 200g spinach
- 90g half fat natural Greek yogurt
- 1 tsp garam masala
- 2 saffron strands
- Coriander, leaves chopped

method
- Heat oil in a pan to smoking point, add the all the spices (apart from the garam masala and saffron) and the sliced onion and cook until lightly browned.
- Then add the ginger, garlic and rogan josh paste and cook for 3-4 minutes adding some stock so that sticking doesn't occur on the bottom of the pan.
- Add the sweet potato the remaining stock and cook for 15 minutes at a brisk simmer.
- Add the tomatoes and chickpeas bring back to the boil and simmer briskly and cook for 20 minutes.
- To finish add the spinach and allow to wilt then mix in the yogurt, garam masala, saffron and fresh coriander. Mix in well and leave to simmer for 1-2 minute to allow for flavour infusion.
Serving suggestion: serve with brown rice.
