Courgette Lemon Drizzle Loaf
ingredients
- 140g caster sugar
- 140ml rapeseed oil
- 1 whole large lemon
- 80g sultanas
- 80g egg whites
- 200g courgette, grated
- 280g self raising flour
- 50g icing sugar

method
1. Preheat the oven at 170c
2. Grate the courgette onto a tea towel and squeeze out the juice
3. Whisk together the oil, sugar, lemon zest and egg white
4. Add the flour and fold in the courgette and chopped sultanas
5. Pour the batter into a lined tin and bake for 35mn or until a skewer comes out clean
6. Make the icing by whisking the juice of the lemon and icing sugar until you reach a yoghurt like consistency
7. Once the cake is cooled transfer onto a wire rack and drizzle the icing on top
