Coffee Grind Granola

- 100g rolled oats (or gluten free oats)
- 10g coffee grinds or instant coffee
- 50g flaked almonds
- 40g maple syrup
- 100g chopped dates
- 40g butter/margarine
- 1/2 tsp vanilla extract
- 15ml water

method
- Pre-heat the oven to 180 degrees and line a baking tray with baking parchment.
- Combine the oats, almonds and coffee in a large mixing bowl.
- Place a small pan over a low heat and add the butter/margarine, vanilla extract, maple syrup and water. Whisk until smooth. If the mixture seems too thick, add an additional 1 tbsp water at a time until the mixture is of pourable consistency.
- Pour the mixture over the oat mix and stir really well to ensure all the dry ingredients are well coated.
- Transfer the mixture onto the lined baking tray. Spread the mixture out evenly, ensuring that you leave little to no space in-between the ingredients - this is how to ensure you’ll get big clusters of granola!
- Bake for 25-30 minutes, carefully turning over the mixture halfway through.
- The granola will continue to cook and crisp up as it cools, so don’t worry if it doesn’t look quite ready once the cooking time is up. Don’t overbake it or the granola will burn!
- Allow to cool completely before serving. Store any leftovers in an airtight container/jar to enjoy later!
