Chilli & Lime Corn

- 4 medium sized corn on the cobs
- 2-3 spring onions, sliced
- 1 lime, zest and juice
- 1 red chilli, finely sliced
- salt and pepper to season

method
- Halve, de-seed & thinly slice chillies. Thinly slice spring onions. Juice & zest limes. Mix the chillies & onions with lime juice and set aside.
- Place the corn in a pan of boiling water & simmer for 4-5 minutes. Remove corn from water & allow to drain.
- Char the corn on a griddle, at a medium to high heat. Once lightly coloured place corn on a tray & top with onion mix.
- Serve hot or cold!
