Smoked Paprika Grilled Mackerel
ingredients
- 1 tbsp olive oil
- 1 garlic clove, peeled and finely diced
- 1 tsp smoked paprika
- 1 tsp dried oregano
- ½ lemon, juice and zest
- 4 fresh Mackerel fillets

method
- Combine the olive oil, garlic, paprika, oregano, lemon zest and juice together and mix well.
- Coat the fillets in the paprika mix, leave in the fridge for approx. 20 minutes to marinate.
- Preheat the grill. Lightly grease a tray, place the fillets on the tray and grill until cooked through, approx. 4-5 mins.
- Serve with homemade potato wedges and red pepper & lime salsa
