Lemon & Dill Grilled Pollock

- Small bunch of dill, roughly chopped
- 1 lemon, juice and zest
- Freshly ground black pepper
- 2 tsp olive oil
- 4 Pollock fillets

method
- Combine the dill, lemon juice and zest together with the olive oil and black pepper. Mix until bound together.
- Coat the fish in the paste and leave in the fridge for approx. 20 minutes.
- Preheat the grill. Lightly grease a tray place the fish on the tray and grill for approx. 8 minutes or until cooked through.
- Serve with homemade potato wedges and red pepper and lime salsa.
