Avocado on Toast
ingredients
- 4 x 55g slices granary bread
- 2 medium avocados, peeled and stone removed
- ½ lime, juiced
- Pinch of crushed chilli
- Coriander, leaves chopped

method
- Crush the avocado with a fork to form a coarse paste. Fold in the coriander and lime juice.
- Toast the bread then top with the avocado and sprinkle with some chili flakes.
Serving suggestion: rub the toast with a clove of garlic before topping with the avocado. Top with a poached egg for a more hearty breakfast.
