BBQ Turkey Burgers

Ingredients:
- 500g lean turkey mince
- 85g breadcrumbs
- 3 tbsp red Thai curry paste
- ½ bunch spring onion finely chopped
- 1 egg, beaten
- 1 tbsp sunflower oil
To serve (optional):
- 4 wholegrain rolls
- Cucumber slices
- Tomato slices
- Handful of salad leaves
- Mayonnaise

method
- Combine the mince, breadcrumbs, egg, curry paste, spring onion and a pinch of salt and pepper into a bowl and mix until well combined. Divide evenly into five burgers and chill for at least 30 minutes.
- Once chilled, brush the burgers lightly with the oil and grill each side for 8-10 minutes, or until cooked through.
- Once cooked, serve in buns with mayonnaise, sliced cucumber, tomatoes, and salad.
