Apple Ring Pancakes
ingredients
- 1 large apple
- 100g plain flour
- 125ml milk (any kind)
- 1 heaped tsp baking powder
- 1tsp honey
- Pinch salt
- ½ tsp cinnamon (optional)
To serve: Yoghurt, honey/maple syrup

method
- Slice ½ the apple into rings and remove the core
- Chop the remaining half into pieces (this will be used to top the finished pancakes)
- In a medium-sized bowl add the flour, baking powder, salt & cinnamon (if using) and whisk to combine and to remove any lumps
- Then add the milk and honey to the dry ingredients and whisk until a smooth, thick batter forms. You may need to adjust the consistency slightly by adding slightly more milk, to your liking
- Set the batter aside and let it rest for 5 mins
- Meanwhile heat a non-stick pan over a medium-high heat (if your pan isn’t non-stick you will need to add a little oil/butter to the pan)
- Once the batter has rested, coat the apple rings in the batter, then pan fry for a few minutes on one side until bubbles start to form and the batter has set
- Flip the apple ring pancakes and cook for a couple of minutes on the other side until golden and cooked through
- Transfer the apple ring pancakes to a plate and serve in a stack topped with the fresh apple, a dollop of yoghurt and a drizzle of honey/syrup. Enjoy!
