
Chicken Tori Kara Age Skewer
ingredients
- 500g chicken thighs, skinless & boneless
- 1 inch piece of fresh ginger, finely chopped
- 1 tbsp caster sugar
- 3 tbsp dark soy sauce
- 2 tsp sake
- 2 tsp oyster sauce
- Wooden skewers, soaked for at least 2 hours

method
- Cut the chicken into 2-3cm pieces remove and discard any excess fat.
- Combine the ginger with the soy sauce, sake, sugar and oyster sauce together in a pan. Place over a low heat to dissolve the sugar (don’t boil), then cool.
- Marinate the chicken in the soy mix for a minimum 3 hours or ideally overnight, in the fridge.
- Skewer the chicken. Cook the chicken under a pre-heated grill for approx. 4 minutes each side. Brush with any of the left over marinade during cooking to develop a glaze.
