
Turkish Brown Rice & Avocado
ingredients
- 1 small onion sliced
- 2 garlic cloves, crushed
- 1/2 small packet of mint, leaves chopped
- 1 tsp crushed chillies
- 160g brown rice
- 1/2 small packet of dill, fronds chopped
- 1 tbsp half fat Greek yogurt
- Couple of saffron strands
- 2 tsp honey
- 2 tbsp rapeseed oil
- 1 avocado, stone removed and diced
- 1/2 red pepper, diced
- 1/4 cucumber, diced

method
- Fry the onions and garlic in 1 tbsp rapeseed oil for a few minutes then stir in the mint and chilli and fry for a few minutes more avoiding any browning.
- Stir in the rice and mix well. Cover with boiling water 1 inch above the level of rice, bring to the boil then simmer gently until cooked at which point there should be no liquid left.
- Remove from the heat and leave to sit and steam with the lid slightly ajar for steam to escape for 10 mins then allow to cool (transfer to a larger container to cool quicker).
- For the dressing infuse the saffron in a tablespoon of hot water for 10 minutes then whisk all the other ingredients in to it €“ the yogurt, honey, dill and remaining 1 tbsp olive oil.
- Once the rice is cooled stir through the avocado, cucumber, red pepper some of the dill and the dressing.
- Season and finish with the remaining dill.
