- 550g beef shin, cut into 3cm cubes
- 80g plain flour
- 1 onion, finely diced
- 2 carrots, finely diced
- 2 celery stalks, finely diced
- 2 garlic cloves, crushed
- 2 rosemary sprigs
- 1 bay leaf
- 200ml red wine
- 400ml prepared beef stock
- 2 tsp rapeseed oil
- Freshly ground black pepper
- 4 ciabatta rolls

method
- Preheat the oven to 150°C.
- Dredge the beef shin in the flour.
- Place a suitable size pan over a medium-high heat and add the rapeseed oil. Brown the beef shin in batches on all side ensuring dark caramelisation.
- Add the prepped vegetables, garlic and herbs to the pan. Submerge with the stock and wine, cover tightly with a lid and place into the preheated oven for 1 hour.
- Remove the beef from the oven and uncover. Return the beef to the oven for a further 10-20 minutes to reduce.
- Serve each portion with a ciabatta roll.
