
Pineapple & Sambal Oelek Salsa
ingredients
- 1 red chilli
- 1 garlic clove, peeled
- 1cm fresh ginger, peeled
- 1 tsp lemongrass paste
- 1 tbsp rice wine vinegar
- 1 tsp granulated sugar
- ½ lime, juice and zest
- ¼ pineapple, peeled and diced
- 2 spring onions, finely sliced

method
- Blend the chilli, garlic, ginger and lemongrass in a food processor or use a pestle and mortar. Gradually add the vinegar while blending.
- Place the pureed mixture into a saucepan with 100ml and bring to a boil. Reduce the heat and simmer for 5 minutes or until reduced by half.
- Add the sugar and stir until dissolved. Add the lime zest and juice and simmer for a further 2 minutes. Allow to cool.
- Mix all ingredients together to finish.
