
Chapati (Indian Flat Bread)

- 100g strong flour
- 100g strong wholemeal flour
- Pinch of salt
- 2 tsp rapeseed oil
- 140ml water

method
- In a suitable size mixing bowl combine all the ingredients and kneed to smooth pliable dough by hand or using a kneed hook. Shape into a round and cover with cling film. Set aside to rest for approx. 30 minutes.
- Place a frying pan over a high heat. Divide the dough into 4 even balls and again shape into rounds.
- Roll the dough into 8 inch circles and place into the dry preheated pan. Cook on both sides for approx. 2-3 minutes until blistered with black spots. Repeat.
Chef's tip: if cooking the breads in batches cover with a damp tea towel once cooked to retain freshness. Briefly reheat in the pan.
